Ruby chocolate is a specially made chocolate different from Milk, White and Dark. To make it, cocoa beans are allowed to ferment for a little while before being made into chocolate. This gives the resulting chocolate a rich ruby glow, and a tart fruity taste that pairs perfectly with white chocolate and raspberry bits!
